Chef Chan further demonstrates his culinary creativity through the &lt;i&gt;Oyster and Sea Cucumber with Duck Drumstick&lt;/i&gt;. The drumstick is de-boned and generously stuffed with flavourful oyster and sea cucumber stuffing, creating a wholesome experience.  &lt;br&gt;&lt;br&gt;
Among other Hong Kong creations available for the picking include &lt;i&gt;Fish Cake and Australian Lettuce fried with Preserved Bean Curd and Roasted Pigeon topped with Fragrant Crispy Garlic&lt;/i&gt;. &lt;br&gt;&lt;br&gt;
For those with a penchant for red meat, Chef Chan recommends &lt;i&gt;Venison Spare Rib braised with Spicy Sauce&lt;/i&gt; and &lt;i&gt;Casserole of Lamb Rib with Dried Scallop Gravy&lt;/i&gt;. To provide perfect accompaniment to the delectable array of main courses are &lt;i&gt;Fried Rice with Scallop and Prawn and Tobiko and Crabmeat Fried Rice&lt;/i&gt;.&lt;br&gt;&lt;br&gt;
For dessert, there is Chef Chans signature &lt;i&gt;Deep-Fried Crunchy Durian Puff&lt;/i&gt; where luscious durian flesh filling is carefully wrapped with a thin layer of skin and deep fried to golden perfection. &lt;br&gt;&lt;br&gt;
On the other hand, the &lt;i&gt;Longevity Steamed Boiled Egg&lt;/i&gt; sees the smooth and silky eggs mixed in a sweet concoction. &lt;br&gt;&lt;br&gt;
